Introduction

Number of Servings: 4

Ingredients

    100 grams of sliced squid
    2 teaspoon of vegetable oil
    1 teaspoon garlic & ginger
    1/2 teaspoon sugar (white or brown)
    1 teaspoon of salt or light fish sauce
    1 tablespoon of tomato paste
    1 tablespoon of sweet & sour chilli sauce
    1/2 cup chopped green pepper (capsicum)
    1 pineapple
    1/2 cup chopped tomato
    1/2 cup chopped onion
    1 tablespoon water
    Few pieces of fresh coriander

Directions

Cut two small sides off the pineapple. Then cut out a large square from the center leaving the sides. Chop the pineapple square into cubes for the mixture.

Add 2 teaspoon of vegetable oil to wok or pan and stir in garlic and ginger. Add squid, salt & sugar, and fry for 1 minute. Put in remaining vegetables and tomato paste, fry (on high) for a further 3-4 minutes, adding water.

Once cooked, serve mixture inside the remaining pineapple on a plate.
