Ingredients

    2 lb. fresh asparagus, trimmed and cut into 1" pieces
    1/2 cup chopped fresh basil
    1 leek, thinly sliced (white and light green part only)
    2 TBSP unsalted butter
    4 cups low-fat chicken broth
    1/2 tsp kosher salt
    1/4 tsp black pepper, freshly ground

Directions

Melt the butter in medium soup pot and add leek slices. Saute for 3-4 minutes, until softened but not brown. Pour in the stock and add the asparagus, basil, salt and pepper. Bring to boil, then turn down the heat and simmer for about 20 minutes, until asparagus is tender. Puree the soup with an immersion blender, or in small batches in a blender or food processor. Serve hot, topped with a dollop of Greek yogurt or reduced fat sour cream, or a thin slice of soft goat cheese.

Serving Size: makes 4 1-1/4 cup servings
