Ingredients

    1 pound pork should, diced or pork stew meat
    3 7oz cans chopped green chile
    1 medium onion
    3 medium potatoes
    2 tablespoons flour
    1 teaspoon pepper
    1/2 teaspoon salt
    1 tablespoon extra virgin olive oil
    1 medium jalepeno, roasted, peeled, and chopped
    1 cup Instant Mashed Potatoes (or potato flakes)
    I can rotel
    1 can 14.5 oz Diced Tomatoes, No salt added
    6 teaspoons Better Than Boullion Chicken Base (or boullion cubes)
    6 cups of water
    1 clove garlic, chopped
    1 teaspoon crushed red pepper
    1 teaspoon ground cumin

Tips

This can be a very versatile recipe. You can tweak the seasonings to what you like. Great served with either bread or tortillas.


Directions

Combine flour, salt, and pepper in ziploc bag. Add diced pork and shake together, until pork is coated in mixture.
Add EVOO in a skillet, and heat. Add pork, and brown.

In another pan, combine water and boullion. Add diced potatoes and meat.

In same skillet that meat was cooked, add diced onion and garlic, and cook until tender. Add to pot of broth.

Add green chile, jalepeno, rotel, diced tomatoes, crushed red pepper, and cumin. Cook until potatoes are tender.

Add potato flakes and cook until thickened.

Salt and pepper to taste

Serving Size: Makes approximately 8 2-cup servings
