Ingredients

    1 medium onion, diced
    1 Tbsp. vegetable oil
    3 small potatoes, peeled and cubed
    2 medium carrots, sliced
    3 cans (14.5 oz each) chicken broth
    3 C water
    2 Tbsp parsley flakes
    2 tsp dried basil
    1 tsp dried oregano
    1 garlic clove, minced
    .5 tsp pepper
    1 can (15.5 oz) great northern beans, rinsed and drained
    1 can (15 oz) pinto beans, rinsed and drained
    1 can (15 oz) garbanzo beans, rinsed and drained
    3 C chopped fresh spinach

Directions

In a Dutch oven, sauté onion in oil. Add the next nine ingredients. Simmer, uncovered, until vegetables are tender. Add beans and spinach; heat through.
