They sell corn by the half-dozen, so we always have some left over. I decided to make a salad using corn from last night and some black beans for protein and fiber. Ingredients

    Soak black beans overnight, drain and cook on the stovetop until tender. Let cool.

    Chop cucumber, tomato, red pepper, and combine with the kernels from 2 ears of corn. Add 3 cups cooked black beans.

    For the dressing, combine juice from 2 limes, 4 tbsp olive oil, 1 tbsp honey, 1 tbsp vinegar (I used homemade hot pepper vinegar), salt, cayenne pepper, and chili powder to taste. Mix well.

    Makes approximately 9 1-cup servings.

Tips

You can add chipotle, coriander, or other seasonings too.
