Ingredients

    1 Cup Dry Lentils
    5 cups water
    1/4 tsp. dried marjoram
    1/4 tsp. thyme (fresh or dried)
    1 Tbl. Salt
    1/4 cup Extra Virgin Olive Oil
    3 Large Onions, chopped
    1 carrot, grated or finely chopped
    1 quart chopped tomatoes(canned or fresh)
    1/4 cup chopped parsley (fresh is best)
    1/4 cup Dry Sherry

Tips

You could add more lentils to gain more fiber and protein.


Directions

Rinse and Drain Lentils (remove bad ones). Place lentils, water, herbs and salt in a soup pot. Bring to a boil and simmer for 20 minutes. Meanwhile heat olive oil on medium heat, add onions and carrot and simmer until soft, but do not brown. Add to soup pot with the lentils/water. Add tomatoes, sherry and parsley. Stir. Simmer 20-30 minutes.

Serving Size: Makes @ 8-10 servings
