Introduction

Ingredients

    4 cups cubed Sweet Potatoes
    3 cups cubed Butternut Squash
    1 cup chopped Onion
    4 tbsp EVOO
    2 Garlic cloves, minced
    1 tsp Red Pepper Flakes
    1/4 tsp Sea Salt
    1/4 tsp cracked Peppercorn
    1/2 tsp Cumin, ground
    1/2 tsp Coriander, ground
    1/2 tsp Ginger, ground or 1 tsp crystallized ginger
    1/2 Lemon, squeezed for juice and zest the peel

Directions

Roast garlic, onions and all spices in the olive oil at medium heat until onions begin to carmelize. Add the cubed potatoes and squash, stir to coat evenly. Add the lemon juice and the zest from the lemon, stir to coat evenly. Cook covered on medium heat, stirring occassionally until potatoes and squash are soft and starting to carmelize on the outsides.

Makes approx. 8 servings

    Delicious. I added a lot more spices...turmeric, garam masala, etc. I also added craisins and walnuts. Will definitely make this again. - 3/26/11
