Introduction

Very filling. Use leftover pork loins. Very filling. Use leftover pork loins.
Number of Servings: 8

Ingredients

    Approximately 2.5 cooked (leftover) pork loin chops, chopped
    1 medium onion
    1 large leek, approximately 1 cup
    Apples, fresh, 1 medium
    Barley, pearled, raw, 1 cup
    Chicken Broth, 1 cup
    Rosemary, dried, .5 tsp
    Allspice, .5 tbsp
    Condensed cream of mushroom soup, 1 can

Directions

Boil barley in 3 cups of water. Reduce heat and simmer until tender, at least 30 minutes.

In a large frying pan, saute chopped onion in margarine and olive oil. Add chopped leek and stir until tender. Add chopped apple, soup, broth, seasoning, pork and barley. Simmer.

Serving size is 1 cup. Serve with a large salad on the side.

For those who prefer a soup, prepare it in a stock pot and just add more broth.
