Introduction

I served this over cheese tortellini and it was wonderful. I served this over cheese tortellini and it was wonderful.
Number of Servings: 8

Ingredients

    2 TBS butter
    2 TBS olive oil
    1/2 cup chopped green onion
    3 garlic cloves minced
    2 oz wine
    1 cup pumpkin puree
    3/4 cup light sour cream
    1/4 cup milk
    1 Tbs flour
    1/4 tsp ground nutmeg
    1/4 cup parmesan cheese

Directions

Heat oil and butter, add garlic and green onions. Cook til onions are tender and butter is foamy. Add wine and pumpkin, stirring well. Mix sour cream, nutmeg, milk, flour and parmesan cheese well. Then add to hot mixture. Serve over pasta.

Serving Size: Makes sauce for 8
