Introduction

1 lb extra lean ground beef
1 med onion chopped
1 can yellow corn
1 can black beans rinsed and drained
1 pkg taco seasonings mix
8 tortillas
3/4 c sour cream
1 cup mexican blend cheese shredded
sliced jalapeno peppers

Ingredients

    Brown ground beef and onions together for abt 10-12 mins, drain.
    Add corn, beans, tomatoes and taco seasoning, mix well and simmer for 5 mins.
    Spray baking dish 2 qt, 8x12 in
    Place half of tortilas in bottom of dish
    Top with beef mixture, spread sour cream over top.
    Layer last tortillas and then the beef mixture.
    Bake in preheated 350 degree over for 25 mins
    Remove from oven and sprinkle with cheese and jalapenos.
    Cook for another 5 mins or until cheese is melted.

Directions

350 for 25 minutes, then 5 minutes until cheese is melted
