Ingredients

    1 cup chopped onion
    1 (15 1/2 oz.) can cannellini beans (white kidney beans) with liquid
    3 cups fresh kale
    1 TBLS lemon juice

Tips

You can replace kale with spinach, collard greens, or mustard greens.


Directions

In sprayed nonstick pan, cook and stir onion until tender. Add beans and 1/2 cup water.

Bring to a boil, stir in kale and cook just until the kale wilt. Sprinkle with lemon juice.
