Number of Servings: 12

Ingredients

    1 lb ground venison
    1 lb ground bison
    1/3 chopped onion
    3 stoplight peppers sliced
    1 can pinto beans
    2 cans diced tomatoes
    1 4 oz can of green chiles
    2 garlic cloves minced
    1 tbsp cumin
    1 tbsp Mexican chili powder
    1.5 tsp salt
    1 tbsp paprika
    2 tbsp olive oil

Tips

You can add a whole onion if desired. But, I only had a partial


Directions

Add olive oil to stock pot or Dutch oven on medium heat
Brown onions
Add meat and brown
Mix dry spices and add to meat while browning
Add canned goods and garlic once meat is browned
Bring to a boil
Reduce to a simmer and serve when desired consistency is reached

Serving Size: Makes approximately 24 1 cup servings
