Ingredients

    1 TBSP extra virgin olive oil
    1/2 large bell pepper
    1 medium onion
    2 cloves garlic
    3 cups chopped swiss chard
    10 oz. leftover bottom round roast beef
    3 cups cubed potatoes
    5 cups mixed vegetables
    1 can crushed tomatoes with basil (28.5 oz. can)
    1 tsp. celery seed
    1TBSP Italian seasoning
    2 cups water

    1/4 cup flour
    1/2 cup water

Directions

Saute onions, garlic and peppers with olive oil until soft. Add swiss chard until wilted. Put sautéed veggies, beef, potatoes, mixed veggies, tomatoes, celery seed, 1 TBSP Italian seasoning, and 2 cups water in crock pot. Cook on high for 4 hours or low for 6-8 hours or until potatoes are tender. When stew is close to being done and it is boiling, whisk 1/2 cup cold water and 1/4 cup flour together and stir into stew to thicken.

Serving Size: Makes 13 1-cup servings.
