Introduction

Ingredients

    *Mahatma Long Grain Brown Rice, 4 cups cooked
    *Trader Joe's Black Beans, 15 oz. can
    *McCormick Taco Seasoning (No MSG), 4 tsp
    *Lucerne Shredded Cheese Mexican Blend, 1/2 cup
    fresh spinach, 2 cups
    fresh mushrooms, 4 med

Directions

This is super easy to make and is a great healthy comfort food.

1)
-empty can of black beans into med-small pot, add 4 tsp taco seasoning and all 4 mushrooms sliced, simmer on medium-low heat until heated through (about 5 min)
2)
-gather 4 cups prepared rice, I use a rice cooker and often have plenty left over in the fridge
-heat
3)
in a dinner bowl layer ingredients:
-first 1 cup rice
-then 1/2 cup fresh spinach (heat of rice and black beans will lightly cook the spinach)
-1/2 cup black bean mixture
-top with 1/8 cup of Mexican cheese blend
4)
-serve (easy to serve all 4 servings or 1-3 servings and save the rest for later)
