NOT a diet food!! For special occasions only :)I'm sure that this pie would be wonderful with meringue however I'm HORRIBLE with meringue so I've left it out. Instead, I serve it with a small scoop of frozen yogurt. NOT a diet food!! For special occasions only :)

Ingredients

1 1/2 cup packed brown sugar
4 tbsp corn starch
1 tsp salt
2 cups 1% milk
3 egg yolks, beaten
2 tbsp butter
1 tsp vanilla
1 9" pie crust, cooked
Directions
Preheat oven to 400*F.
1) In a medium sauce pan, combine brown sugar, cornstarch, salt and milk. Stir over low heat and KEEP STIRRING until the mixture thickens (about 10 min or so).
2) Once the mixture thickens, remove from heat and whisk in egg yolks. Place pot back onto low heat and continue to cook and stir for another 2-3 minutes.
3) Remove the pot from heat, add the butter and vanilla, and stir until completely combined.
4) Pour the filling into an already cooked pie crust. Bake in preheated oven for 8-10 minutes.
Cool completely before serving.
