Ingredients

    Rice Noodles, 4 cups
    Ground Turkey, 1 unit, yield from 1 lb raw
    Pasta Sauce - 2.5 cups
    Onion I med yellow onion sauteed in Olive Oil
    Mushrooms, canned, 1.5 cup
    Seasalt 1 tsp
    Pepper, black, 1 tsp
    Canned Tomatoes, 0.5 can

Tips

Add Parmesan cheese as a garnish if you are not feeding lactose-sensitive folk


Directions

Saute onions and garlic in oil on medium heat for 5 minutes or until translucent. Add mushrooms and saute for an additional 2-3 minutes. Increase heat to medium-hot and add (thawed) ground turkey. Scrape meat with spoon as it browns. As meat cooks, add salt, pepper, spices and herbs. Once meat is browned add pasta sauce and canned tomatoes and cook for an additional 3 minutes or until sauce begins to boil. Reduce to simmer.

Once noodles are cooked (al dente) and them to the meat sauce. If sauce is too thick/dry, add some of the water that the noodles cooked in. Simmer for an additional 10-15 minutes or to taste. (I like to let it slow cook to soak up the flavors)
