Introduction

Ingredients

    1 and 1/8 Cup Simply Potatoes diced
    1/3 Cup Farmland diced ham
    3 large eggs
    1/4 Cup Kroger cheddar jack (shredded)
    Tabasco Sauce (to taste)
    Himalaylan Sea Salt (to taste)
    Fresh cracked pepper (to taste)
    2 Slices Pumpernickle Bread
    1 Tbs Smucker's sugar free Blackberry Jam
    5 Sprays I Can't Believe It's Not Butter Spray
    1 Tbs Olive or Canola oil

Tips

This is what I had on hand and threw together quickly for my husband's and my breakfast, along with coffee brewed with Saigon Cinnamon (and sugar free Pumpkin Spice creamer)

We get up at 4 am and it is usually around 10 am before he gets a "lunch" break-so we like for him to have a decent breakfast out the door.

For him, I took two portions and rolled in two flour tortillas of which he ate one for breakfast and took the other for his morning "lunch" break.

I had the toast.

You can omit the salt, add any variety of peppers or other flavorings, low-fat Sargento 4 Cheese Mexican flavors, top with pico de gallo, salsa, dice jalapeno's, omit cheese altogether, use low carb wraps, whole grain tortillas, and a host of "anything you desire"!

As with any recipe, take the basic concept and then: GO FOR IT! :)

Directions

Heat oil over medium low heat and add potatoes. Cook, stirring occasionally, 5 to 7 minutes-being sure is cooked through to desired texture-(crispy-just done-soft)

Put Pumpernickle in toaster. Do not start yet.
Stir in ham cooking a minute or so to warm up and release flavor throughout the potatoes.

Stir in eggs already beaten. Allow to set a minute or two before first toss with other ingredients. Allow to set another minute or two, toss again; now add cheese.

Start toaster.

Let cheese set for a minute to start melt process then toss with other ingredients to coat.

Either add Tabasco to pan, or set out for persons to add their own on their own plate.

Spray toast and put 1/2 tbs Blackberry jam on each.
