Introduction
I was looking for dukan inspired recipes and came across this bread. The sodium is a little high but you can reduce that by using reduced sodium or no sodium baking powder. Ingredients
-
1 cup wheat and oat bran
1 cup wheat germ and powdered milk
1 tbsp. plus 1 tsp. baking powder
2/3 cup greek nonfat yogurt(I find harris teeter had the lowest sodium) or use your favorite brand
6 egg whites plus 2 whole egg
1/3 cup water
This bread has to be kept in the refrigerator and lasts for a week.
Tips
This makes more than enough batter for the 8 inch laf pan. I took 2/3 cup of batter and placed a 1/3 cup each in two mini pie tins and baked along side loaf and made "English muffins" I baked the mini pie tins for 15 minutes.
Directions
Preheat oven to 390. Mix dry ingredients then wet ingredients. Stir wet into dry.
Grease an 8 inch loaf pan. I used a tinfoil pan that was the correct size and placed inside my 9 inch pan to stabilize the tinfoil pan.
Bake for 10 minutes. reduce to 370 bake for 35 minutes. When top is brown and toothpick inserted comes out clean bread is done.
Serving Size: Makes 24 slices.
