Ingredients

    1 1/2 cup of white flour
    3/4 cup sugar
    2 tsp baking powder
    1 tsp ground nutmeg
    1 1/2 tsp cinnamon
    1/2 tsp salt
    1 egg
    1/3 cup vegetable oil
    1/3 cup soy milk
    3 granny smith apples, peeled and shredded

Tips

They keep well in an air-tight container. You can also place them in ziplock bags and/or wrap them in cling wrap and freeze them for the week. Just nuke them in the microwave on medium for 1 minute before eating!


Directions

Pre-heat the oven to 400F. Peel your apples and shred them in a bowl. You should get a little over 1cup with 3 medium granny apples. Make sure you strain them to get rid of the excess liquid. Set aside.

In a bowl, combine all the dry ingredients - flour, sugar, baking powder, nutmeg, cinnamon, salt.

In a 1cup measuring cup, pour 1/3 cup of vegetable oil. Add the egg, then just enough milk to fill the cup. Whisk well.

Add the shredded apples to the dry ingredient, folding them in with a fork. Then gently add the wet ingredients, and mix until only just combined - don't overmix! Some white streaks of flour leftover are ok!

Line a regular muffin tin with muffin liners, and fill them up to 2/3. If you want, top each muffin with a dash of brown sugar and quick oats.

Bake in the pre-heated oven for 25 minutes.
