    8 6-8" whole wheat tortillas
    8 oz cheese, shredded
    1 can refried beans
    1 small onion, minced
    3 roma tomatoes, deseeded and chopped finely
    2c pulled pork
    1 packet taco seasoning


This recipe can easily be made lower fat using low-fat cheese and beans. I make the full fat version as I have two growing toddlers to feed! :)


Shake the meat with the taco seasoning in a ziploc bag. Lay each tortilla on a piece of aluminum foil and spread with beans, then place other toppings in a line and fold closed. Roll tightly in the foil. Place in a crockpot on HIGH for 2 hours. Serve with sour cream, salsa, and/or guacamole.
