Ingredients

    1 Chicken Breast (i use pre-cooked)
    1 cup coconut
    1/4 cup purple onion
    1 cup canned yellow sweet corn
    2 tbsp. lemon juice
    2 tbsp. cilantro
    1.5 cup fresh spinach or lettuce

Directions

Chop chicken, onion, and cilantro into small pieces. Add corn and lemon juice. Place on top of a bed of fresh spinach or lettuce of your choice and top with toasted coconut.
