Introduction

Ingredients

    2 medium potatoes
    .25 cup skim milk
    4 ounces water-packed tuna
    2 Tablespoons fresh chives OR 1 Teaspoon dried onion flakes
    1/2 cup shredded mozzarella cheese

Directions

Bake or microwave potatoes until they are easily pierced with a fork. Cut in half lengthwise and scoop out most of the potato, leaving the half-shells. Mash scooped-out potato with the skim milk, then stir in the chive (or onions) and shredded mozzarella cheese. Stuff potato shells with potato mixture and return to oven or microwave until heated through.

Serving Size: Makes two servings of two half-potatoes per serving
