Ingredients

    1 spray cooking spray
    1 mediumt onion thinly sliced
    2 C fat-free skim milk
    1 C low fat cheddar cheese
    1/4 tsp pepper
    1 T butter
    2 T all-purpose flour
    2lbs potatoes, thinly sliced
    1 tsp salt

Directions

Preheat oven to 375. Coat 2 qt dish with cooking spray. Melt butter in a large pot over medium heat. Add onion and cook, stirring occasionally, until onion begins to brown (about 5 min) Stir in flour, add milk slowly, stirring, add potatoes and stir to mix. Bring to a boil. Stir in 3/4 C of cheese, satl & pepper. Pour mixture into prepared baking dish and level out surface. Bake for 1 hr uncovered. Cover and bake until potatoes are fork-tender, about 20 min. more. Change temperature to broil. Sprinkle cheese & broil for 1-2 min.
