Ingredients

    3 English cucumbers, peeled (except one strip left on), halved, seeded and rough chopped
    3 garlic cloves
    3 tablespoons (good) Apple Cider Vinegar
    1-1/4 cup sour cream
    Garnish with small shrimp/toasted (and cooled) slivered almonds

Tips

The bag of almonds from Costco can be placed on a large cookie sheet and toasted in a 350 oven (about 8 minutes-do not overbake). Remove sprinkle with a little melted butter and a little salt. Cool, store for use as a garnish.


Directions

Place cucumbers and broth in blender and blend on high for a few minutes.
Remove from blender, and now put in sour cream, garlic and vinegar. Blend a few minutes.
Combine ingredients. Mix well, refrigerate a couple hours. Serve with the small shrimp & almonds.
