Number of Servings: 8

Ingredients

    2 T. extra virgin olive oil
    1 medium sweet onion, chopped
    4 cloves garlic, chopped
    1 large zucchini, chopped
    1 large yellow squash, chopped
    1 delicata squash, seeded and chopped
    2 T. chili powder
    1 T. cumin
    2 -15 oz. cans pumpkin
    2 c. black lentils
    2 - 28 oz. cans tomatoes, chopped
    2 - 12 oz. beers

Tips

You can add more zucchini and yellow squash if you can't find delicata squash. Even though this recipe calls for canned tomatoes, I use fresh to cut down on sodium. I plan to try with black beans instead of lentils one day! Would be interested to know how it tastes without the beer too!


Directions

Heat oil in heavy pot, add onion and garlic, sauté until soft. Add squashes, chili powder, and cumin, stir. Saute for 5 minutes. Add lentils, tomato, beer, and pumpkin. Simmer 45 minutes, stir frequently to keep from burning.
