Introduction
This is a modification of Skinny Tuna Cakes found on skinnymom.com. I liked the idea, but wanted to make it them a little more "Primal" for my lifestyle. I adjusted amounts so that there are enough to feed a family of 4 for dinner. Eventhough I did that, I honestly didn't expect my 4 and 6 year-old children to eat them...but they DID! Ingredients

4 cans albacore (7 oz. each)
6 large eggs
1/2 large onion, petite dice if possible
5 whole grain saltines, smashed up
4 Tbsp grated parmesan cheese
1/4 tsp black pepper
2 heaping tsp Chesapeake Bay seasoning (like Old Bay)
Chipotle Mayo for topping

Tips
My kids ate them with ketchup, which sounds gross but everything they eat sounds kinda wretched. :P
Directions
Preheat oven to 350-375 F.
1. Drain the tuna. Combine tuna, eggs, diced onion, cracker crumbs, parmesan, pepper, and Old Bay seasoning. Mixing with hands works the most effectively.
2. Once thoroughly combined, form palm-sized patties with the mixture. Mixture will feel a bit crumbly, but have faith! :) Place on a cookie sheet that has been sprayed liberally with non-stick spray. Make patties until all of the mixture has been used up.
3. Cook for 15 minutes, then cook under the broiler until the tops are browned to your liking.
4. Top with Annie's Make-yer-nose-run Mayo, a mild salsa, or maybe tartar sauce?
Serving Size: Makes 9 palm-sized patties (woman's hands)
