Ingredients

    half cup gourmet mushrooms
    water
    1 tsp garlic
    1 pat butter
    2 tbsp Mushroom stock (home made)
    .5 cup Cedarlane Quinoa Tabouli
    1 full pocket thin (split in half)

Tips

You can reduce the carbs and most the salt by replacing the pocket thin with lettuce as a wrap or making into a spinach salad. Fresh spinach will add iron and fiber where lettuce adds no dietary value.


Directions

1. add the mushrooms in a bowl and cover with water Let sit to reconstitute for 20 minutes
2. reserve 2 tbsp of the water to use as stock
3. Heat pan and add butter, mushroom stock, and garlic and heat to smoke point
4. Add mushrooms and cook for approximately 3 minutes
5. on a cutting board chop up to mushrooms as desired
6. Mix mushrooms with Tabouli and combine.
7. Stuff Pocket
8. EAT

Serving Size: Makes 2 sandwhiches
