Ingredients

    2 chicken breasts
    3 tbsp. chopped onion
    1 - 4oz can green chilies
    1 C frozen corn
    1 - 15.5 oz can kidney beans
    1 - 15.5 oz can black beans
    1 C salsa
    2 C chicken broth
    1 tsp. ground cumin

Tips

top with sour cream, shredded cheese and fresh cilantro and serve with tortilla chips if desired


Directions

Boil chicken in water. Use water to make 2 C chicken broth by adding 2 chicken bouillon cubes. In separate pot, sauté onions and green chilies till soft then add in remaining ingredients and cook to a simmer for about an hour to let flavors blend.

Serving Size: makes 4 - 2 cup servings
