3 cups cooked brown rice
1 16 oz jar mild salsa
1 14 oz can diced tomatoes
1 4 oz can diced mild green chiles
1 15 oz can black beans
1 3.8 oz can sliced black olives
1 cup shredded light mexican cheese
Tips
This is easy to make it however you like it, you can spice it up with spicier salsa or canned jalapeņos. My husband likes it with cooked and diced chicken breast added.
Directions
Cook 1. 5 cups dry brown rice (do ahead of time)
add other ingredients except cheese) and place in a large covered casserole. Bake at 350 for about 30 minutes or until warmed. Put cheese on top and return to oven until melted, about 10 minutes.
