Introduction

Ingredients

    2 Tbs. olive oil
    1 large onion, chopped
    3 cloves garlic, minced
    1 (16 oz) can whole peeled tomatoes
    1 (16 oz) can plain tomato sauce
    1 (6 oz) can tomato paste
    1 Tbs dried oregano
    2 Tbs dried basil

Directions

1. Heat oil over low heat. Add onion and garlic, and cook until onions are translucent.
2. Add oregano and basil.
3. Chunk whole peeled tomatoes into small cubes and add. Drain excess from can into pot, discarding dregs.
4. Add tomato sauce and tomato paste, and stir slowly.
5. Cook over low heat for 3-4 hours, stirring occasionally.

* Sauce will keep in refrigerator for 7 days.

    Incredible!
    I make this really often - it's lovely, tastes fresh even after a week in the fridge, and freezes perfectly well too. Toss in some soya mince, or chopped mushrooms, courgette or aubergine to vary things a little. - 3/17/07
