Introduction

Inspired by the Spark 30 day Fit Food Challenge. Inspired by the Spark 30 day Fit Food Challenge.
Number of Servings: 1

Ingredients

2 Cups chopped Romaine lettuce fresh express hearts
1 Cup fresh Baby Spinach (raw)
    1 Green Onion
    8 halved Cherry Tomatoes, Fresh
    1 Tbsp. Parmasan Grated Cheese
2 Tbsp. Cardini's Light Caesar Dressing 2 Tbsp
    3 Shrimp, raw

Tips

I used cooked frozen shrimp. Nice because you can keep the bag frozen and take out a few shrimp here and there. They thaw quickly under cool running water. Then I removed the tail and cut up into bite size pieces with my kitchen shears.

Directions

Mix all ingredients up in a bowl and enjoy!

Made this as part of our Thanksgiving meal, 6 servings. Used all romaine, skipped the onion. Definitely a keeper. Added the dressing when served. - 11/24/16
