PUMPKIN SWIRL
3 oz Philadelphia Cream Cheese - 2x Protein, softened
1/2 cup Pumpkin-Libby's 100% Pure Pumpkin
60 g Egg Whites
3 Tbsp Ideal Zero Calorie Xylitol Sweetener
1 tsp Pumpkin Pie Spice
BLACK BEAN BROWNIES
190 g Black Beans
3 Tbsp Applesauce, unsweetened
1 Egg, large
3 Egg whites, large
60 g Ideal Zero Calorie Xylitol Sweetener
40 g Hershey's Special Dark Cocoa
1 tsp Nescafe Clasico Instant Coffee
1/2 tsp Baking Powder
50 g Hershey's Sugar Free Chocolate Chips
Dash of salt
Directions
Preheat oven to 350°F. Beat all pumpkin swirl ingredients with an electric mixer on low speed until smooth. Set aside. Process drained and rinsed black beans, until smooth. Add eggs, vanilla extract, applesauce, and process until smooth. Add sugar substitute, cocoa, coffee, baking powder, and salt, and process, until well combined and smooth. Process chopped chocolate chips separately and fold into brownie mix. Pour 3/4 brownie mix into greased/lined 8" X 8" baking pan. Spoon pumpkin swirl evenly over batter. Spoon remaining brownie batter over filling. Cut through batter several times with knife for marbled design. Bake for 30 minutes or until toothpick inserted in center of pan comes out clean. Turn oven off and let cool in oven w/door cracked for 5-7 minutes. Place on rack, until cooled. Cut into 16 brownies (2" X 2").
Placing cooled and cut brownies in refrigerator for up to 12 hours can diminish any bean flavor and enhance the chocolate flavor. After refrigerating, store at room temperature in sealed container. Best served at room temperature or slightly warm.
