Ingredients

3 cups Winter squash, cooked and mashed
1/4 cup egg substitute (or 1 egg)
4 tbsp margarine
1 tbsp vanilla
2 cups flour
1 tsp baking soda
1.5 tsp baking powder
1 tsp nutmeg
1 tsp cinnamon
1/8 cup brown sugar
1/3 cup raisins or dried cherries
Directions
Preheat the oven for 350. Place a piece of parchment paper on a cookie sheet and set aside.
Cook and mash winter squash or prepare according to the package.
Cream the margarine. Then cream the margarine with the vanilla and the egg.
Mix the dry ingredients separately (flour, baking soda, baking powder, nutmeg, cinnamon, and brown sugar).
Add the dry mix to the wet mix and blend well. Stir in the raisins or dried cherries.
Scoop by rounded teaspoons onto the parchment on the cookie sheet. Bake for 10-15 minutes or until firm.
Makes 24 servings.
