Introduction

Tilapia fillets lightly coated with coconut and baked. Very quick and delicious! Tilapia fillets lightly coated with coconut and baked. Very quick and delicious!
Number of Servings: 4

Ingredients

    4 tilapia fillets, 3.5oz each
    1 Tablespoon lemon juice
    1/2 cup dry Italian bread crumbs
    1/4 cup flaked sweetened coconut
    Cooking spray (Canola used in the calculations)
    Salt & pepper to taste


Directions

Preheat oven to 425 degrees.
In a small bowl, combine bread crumbs, coconut, salt & pepper. Mix well.
Brush lemon juice on each piece of fish.
Dredge each fillet in the dry mixture and then place fillets on a non-stick baking pan.
Spread leftover crumbs on top of each fillet.
Coat each fillet with cooking spray.
Bake in the oven for 12-15 minutes.

Serving Size: Makes 4 servings at 3.5oz of fish each.
