Introduction

These cookies have enough ginger in them to have a bite which my familly loves. If you're not a huge fan of ginger simply use less.

Ingredients

    3/4 cup salted butter, softened
    1 cup brown sugar
    1 egg, beaten
    1 tsp vanilla extract
    1/2 cup ORGANIC molasses

    2 1/2 cups flour (white or whole wheat both work fine)
    1 tsp salt
    1 1/2 tsp baking soda
    1/2 tsp ground cloves
    1 tbsp cinnamon
    2 1/2 tbsp ground ginger

    1/4 cup sugar

Tips

Organic molasses can be found in just about any grocery store now. Wholesome Sweeteners is the one that I'm always able to find. Barring that there are plenty of online grocers now that sell this as well (In Canada, Well.ca is a fantastic option).


Directions

Preheat oven to 350*F

1) Cream together butter and sugar in a large bowl. Add beaten egg, vanilla and molasses. Combine well and set aside.

2) In another bowl, sift together all of the dry ingredients (including spices) ACCEPT 1/4 cup sugar. Add the dry mixture to wet, stirring well to incorporate. If the dough gets too thick to stir comfortably, dig in with your hands. Note that dough should be sticky.

3) Form the dough into balls using about 2 tsp of dough for each. Dip half of each ball in sugar and place sugar side up on cookie sheet about 3 inches apart. Press to flatten just over half way down with the bottom of a glass or measuring cup.

4) Cook for no more than 7-8 minutes in preheated oven. If you have a convection oven leave this setting off if you can, or decrease your cooking time by 1 minute. If your oven runs hot I would also recommend decreasing heat by at least 1 minute.

5) Immediately but gently remove cookies from pan and transfer to a cooling rack.

Cookies are made small so that they're "dainty" sized for Christmas platters.
