Ingredients

    1 medium sweet potato
    ½ teaspoon taco seasoning mix
    4 8” tortillas
    ½ cup canned black beans, drained
    ½ cup shredded cheese

Directions

To Cook Sweet Potato

1. Rinse sweet potato with water and scrub with vegetable brush to remove dirt.
2. Put potatoes in large saucepan and cover with water.
3. Cover saucepan with lid and boil for 15-20 minutes until potato is soft.
4. Drain water from saucepan and let potato cool.
5. Cut potato in half and scoop out flesh and discard skin.
6. Mash sweet potatoes with a fork.

To Prepare Quesadillas

1. Preheat oven to 400°F.
2. Add taco seasoning to sweet potatoes and mix together.
3. Place 4 tortillas on baking sheet.
4. Spread sweet potato mix on ½ of each tortilla.
5. Scoop black beans on top of sweet potato mix and sprinkle with cheese.
6. Fold tortillas in half.
7. Bake in preheated oven for 5 minutes on each side.
8. Cut each tortilla into wedges to serve.
