Ingredients

    1 cup dices mushrooms
    .5 cup frozen spinach
    1 Tbsp Canola or Olive Oil
    6 large eggs beaten
    .5 cup cooked spaghetti
    1 cup cheddar cheese

Tips

Use any veggies you like! This is a great recipe to use up leftovers!!


Directions

Sautee mushrooms and spinach in oil for 3-5 minutes -- cool slightly. In a medium bowl beat eggs, add spaghetti and sauteed vegetables. Pour mixture into a 9 inch greased pie plate. Top with Cheese. Bake at 350 for 30-35 minutes until egg is set.
