Ingredients

1 cup stick margarine
2 cups sugar
2 cups low fat plain soy milk
1 cup light corn syrup
1 tbsp vanilla
Directions
Grease and line an 8" square pan with parchment.
Place all ingredients (except vanilla) in a large saucepan.
Bring ingredients to a boil stirring often.
Cook over medium heat, stirring, until candy reaches 245F on a candy thermometer.
Remove from heat, stir in vanilla.
Pour into lined baking pan and allow to cool completely.
Snip into pieces using clean kitchen shears (or using a knife).
Wrap individually with waxed or parchment paper.
Keep at room temperature, refrigeration will cause them to melt.
