Ingredients

    1 tsp olive oil
    1 diced onion
    1 cup diced celery
    1 cup diced zucchini
    1 cup chopped kale
    2 cloves garlic
    4 cups broth
    1 (14.5) ounce can chopped tomatoes with juice
    2 handfuls of baby spinach leaves.

    fresh sage and thyme, salt and pepper as desired

Directions

Saute veggies in olive oil, add diced canned tomatoes and spinach leavesm simmer 15 minutes more. Add salt and pepper, sage and thyme as desired.
