Ingredients

    1 pkg. (12 oz.) SeaPak Shrimp Scampi, frozen
    1/4 lb. spaghetti, cooked al dente
    1 can diced tomatoes
    1/4 c. white cooking wine
    1/2 c. grated Parmesan cheese
    1 can (4 oz.) Portabella mushrooms (opt.)

Tips

I put in the mushrooms almost as an afterthought. I think this is the BEST pasta I've ever made!


Directions

Cook pasta to al dente. Drain and set aside. Heat large skillet on med. high heat for 1 min. Add frozen shrimp and sauté for 6 min., stirring occasionally. Pour can of tomatoes and wine into skillet and stir together with shrimp. Simmer shrimp and tomatoes for an additional 3 min. Add mushroom for the last 2 min. of cooking time, if using. Add cooked pasta and Parm. cheese to pan and toss with shrimp mixture. Add cracked pepper to taste.
