Introduction

Ingredients

1. 1 and 1/4 cup unsweetened shredded coconut
2. 1/4 cup egg whites
3. 1/4 cup sweetener of choice (I used splenda)
4. 1/4 cup strawberries
5. 1 scoop strawberry/vanilla whey
Tips
If you don't want to add the protein-powder, you can sub with coconut flour, but something needs to be added to absorb some of the moisture generated by the strawberries
Directions
1. Preheat oven to 325F
2. Mix all ingredients
3. Make little clusters with a table spoon (mix yielded 12) on a parchment sheet
4. Bake for 15-20 minutes until airy, crispy and smells like strawberry-coconut heaven!
