Ingredients

    1 cucumber, peeled, seeded choped
    1 tomato, chopped
    1 small avocado, chopped
    2 cups garbanzo beans or chick peas, mashed

    dressing:

    1 tsp dijon mustard
    3 T apple cider vinegar
    1 tsp olive oil
    pinch salt
    pinch of italian seasoning
    1/2 T maple syrup.

Directions

mix all the veggies togeather in a bowl. in another small bowl mix the dressing, then toss with the vegetables. serve over mashed chickpeas.
