Ingredients

    1 cup almond flour
    1/4 cup coconut flour
    1/4 tsp salt
    1/2 tsp baking soda
    1/2 cup xylitol
    2 TBSP butter
    1/4 cup unsweetened shredded coconut
    1/2 cup sugar free chocolate chips
    1/4 cup chopped pecans
    2 lg eggs
    1 tsp vanilla extract

Directions

In a bowl add dry ingredients and mix well with a fork.

In a separate, medium-sized bowl, Cream butter and xylitol together until fluffy. Add eggs one at a time, beating well between each. Add vanilla and mix well.

Add the dry ingredients to the wet ingredients and mix well with a spoon. Once these are totally incorporated, add coconut, chocolate chips and pecans and mix until all are distributed throughout mixture.

Line a cookie sheet with parchment paper and spray with nonstick spray.

Take cookie dough about the size of a walnut and make a ball. Place on parchment lined baking sheet and press out with finger tips lightly.

Bake at 350° for 12-14 minutes until a rich brown in color.

Cool on wire rack completely before removing to tray.
