Ingredients

    4 Bell Peppers, halved
    2 cups rice
    1 lb ground turkey
    2 cups shredded cheese
    1 small onion, chopped
    4 garlic cloves
    4 tablespoons tomato paste
    1 egg (or quarter cup egg substitute)
    Olive Oil
    Oregano, Salt and Pepper to taste

Tips

To reduce the amount of olive oil needed, use a olive oil sprayer. Spray pan. Also, to ensure proper browning of the bell peppers you can spray a little olive oil on the outside of the pepper before baking.


Directions

1. Cook rice, you will need 2 cups cooked. Left-over white rice also works.

2. Preheat oven to 350 degrees. Meanwhile, place a pan of water on the stove top to boil.

3. Finely chop the onion and garlic cloves. In a teaspoon of olive oil saute onion and garlic over medium-low heat under translucent.

4. While onion is cooking, cut off tops of bell peppers. Clean out any seeds, and cut in half. Add the halved bell peppers to the boiling water and boil for approximately 3 minutes, or until tender. Remove from water and let dry.

5. Combine ground turkey, rice, onion, garlic, shredded cheese, tomato paste and egg. Add oregano, salt and pepper to taste. Mix well.

6. Stuff bell peppers with turkey/rice mixture. Place in a baking dish and cover with foil. Bake 40 minutes, and remove from the oven.
