Ingredients

    16 oz of cocktail shrimp
    2 14 oz. cans of petite cut diced tomatoes
    1/4 cup of onion
    2 cloves of garlic
    2 tbsp. of extra virgin olive oil
    2 tsp. of thyme
    1 tsp. of cumin
    1/4 tsp. of cayene pepper

Tips

Can serve over brown rice.


Directions

Over medium heat put the 2 tbsp. of olive oil on. Chop up the onion and the garlic and sautee until clear. Add the remaining ingredients and cook over medium heat for about 30 minutes.
