Number of Servings: 4

Ingredients

    Frozen carrots 1 1/3 cup
    Flour 1 cup
    Cinnamon, ground, 2 tsp
    Nutmeg, ground, 1 tsp
    Baking Powder, 1 tsp
    Baking Soda, 0.5 tsp
    **Flax Seed Meal (ground flax), 2 tbsp
    Granulated Sugar, 6 tsp
    Sweetener, 4 packets
    Milk of choice 0.25 cup
    Unsweetened applesauce 1/4 cup
    Vanilla Extract, 1 tsp

    Icing (not included in nutritional count):
    Powdered Sugar, 4 tbsp
    2 Tbsp milk of choice
    dash of flavouring

Tips

Look pretty with a bit more icing sugar dusted on top!


Directions

Defrost frozen carrots in microwave. Chop finely in food processor. Stir into wet ingredients. In separate bowl, combine dry ingredients. Add to wet ingredients until fully combined. Spoon batter into 4 pregreased ramekins and bake at 350F for around 15 minutes, or until a knife comes out clean. Cool and remove from ramekins and slice cakes in half horizontally and fill with a spoon of icing. Enjoy
