Ingredients

4 cups fresh or frozen (pitted) sour cherries
1 cup sugar (plus 1 tsp for sprinkling)
1/4 cup cornstarch
1 teaspoon real vanilla extract
2 9-inch pie crusts (store-bought or homemade)
Directions
Heat the cherries on medium with the lid on until they get hot and give up some liquid, then take them off the heat. Mix the sugar and cornstarch together and add to the hot cherries. Stir, add vanilla, then heat on low, stirring frequently, until the filling thickens. Cool until ready to fill the crust. Once the top crust is on, sprinkle with a little sugar and bake at 375 for 45-50 minutes.
Serving Size: Makes a 9-inch pie (about 8 slices)
