Ingredients

    1 c all-purpose flour
    1 c buckwheat flour
    1/2 c old-fashioned oatmeal
    2 t baking powder
    1/2 t baking soda
    1/4 t iodized salt
    2 large eggs, slightly beaten
    1 1/2 c low-fat buttermilk
    6 T unsalted butter, melted
    4 T brown sugar (not packed)

Tips

You can vary the amounts of buckwheat and all-purpose flour, and the oatmeal within reason.


Directions

Mix together the dry ingredients in a large bowl.
In a separate bowl mix together the eggs, buttermilk, and brown sugar.
Add this mixture to the flour mixture and stir until well blended.
Cook on a lightly greased waffle iron.
Enjoy.
