    1/3 c sugar
    3 tbsp Minute Tapioca
    2 3/4 c 2% milk
    1 egg, ell beaten
    1 tsp vanilla extract


Mix sugar,tapioca, milk and egg in medium sauce pan and let stand 5 minutes

Cook on Medium heat, stiring constantly, until mixture comes to a full boil (pudding thickns as it cools). Remove from heat and stir in vanilla.

Cool 20 minutes, stir. Serve warm or chilled. store leftover puddng in refrigerator.

Makes 6 1/2 c servings

    I like to use a spoon and mix/blend the egg, sugar, and tapioca together. I then gradually stir in the milk, before letting sit. - 11/2/08

    This is great..it is like my mom's, but she seperated the yolk and white. Try that; add the yolk to the first part. Beat the white with a little of the sugar and fold in at the end. It gets really fluffy. - 8/29/08
