Ingredients

    (1) carton Swanson Flavor Infusions Mexican Tortilla broth
    (1) medium yellow onion, chopped
    (1) jalapeņo pepper, chopped (seeds add more heat)
    (1) can corn, drained
    (1) can black beans, drained & rinsed
    (1) can petite diced tomatoes, drained
    (3) Tbsp tomato paste
    (32) oz. boneless chicken breasts, thawed or frozen (about 2/3 of a bag of boneless chicken breast tenderloins)
    (1) can green chiles (optional, this is a Colorado thing!)
    1 tsp. Liquid Smoke (optional)

Tips

This recipe is "tangy" and I usually add a dash of "liquid smoke" to tone down the tang.

You can top with crushed tortilla chips, cheese and/or sour cream. Careful - that's where the calories hide!

I can only find this Chicken Tortilla Flavor Infused version of Swanson Broth at Walmart markets. I don't shop there but it's totally worth the extra stop for this delicious convenience item.

You can cook this on HIGH for 3 hours or LOW for 6 - even with frozen chicken breasts!


Directions

Chop onion & jalapeņo. Drain canned items. Add all ingredients to slow cooker and let it cook!

Use forks to shred the chicken in the pot once it is cooked.
